I made two batches of paella in an 18 inch pan. The rice absorbed the liquid and finished off nicely. Perfect for paella!

A superb product
My first bag of this delicious and authentic Spanish Paella Rice was getting low, and I quickly reordered. Make a really good chicken stock, using a real chicken carcass and, with this superb rice, you'll be making paella better than the restaurants.

Worked very well and absorbed stock quickly
I wanted authentic paella rice, along with other Spanish ingredients. I have tried arborio rice in paella. It "works" but I did not care much for the results. Real Spanish paella rice is much shorter and it absorbs the stock quickly. The ratio of stock to paella rice is 4 parts stock to 1 part paella rice. It cooks quickly! Best to not pour in all stock at one time, hold back a cup or so and add as the rice "grows" and liquid is absorbing quickly. Don't walk away while you're cooking paella; only bad things can happen. Spanish chorizo and real BOTH sweet and hot paprikas made the paella fabulous! Be careful when buying saffron! I got hold of a fake tiin of it. it's estimated that 90% of saffron sold is fake. Check online for what to look for in real saffron.
