Flavor:3-pack Amazake koji Koji is steamed whole barley or polished rice inoculated with the Aspergillus oryzae culture. It is responsible for the fermentation process of not only amazake (rice koji), but also miso (rice or barley koji) and a number of other fermented foods. Package includes directions. Traditionally this is what the different kinds of koji are used for: If you want to make amazake or rice milk, order the amazake koji. For miso, either choose short term (quick) koji, for the sweeter miso varieties, or long term or barley koji for the longer fermented darker heartier miso varieties. If you want to use the koji to ferment or marinate vegetables or meat any koji will do; they all contain powerful enzymes that will break down protein, carbohydrates, and fats. Subtle flavor differences are the result of the proportions in which these enzymes occur in any particular koji. Not sure? Start with short term koji as an all-round koji, gain some experience with that, then move to the others varieties to expand you horizon.

Delicious healthy mugi koji for mugi miso with fast shipping!
Fantastic product! I made myself a 3 gallon batch of mugi miso (barley miso paste) using 5 pounds of mugi koji, 6 pounds of dry organic soybeans and 1 kilo of salt. That's the basic recipe for what I have currently sitting in the back of my kitchen cabinet slowly fermenting away, the wait until September of the following year is going to be the hardest part; although it took me over 10 hours of slow solo work to make it from start to finish.

Unbeatable quality! I purchased different brands to compare. This brand is so reliable and surely makes my rice very sweet. I don't mind the price considering no more waste of the material, time, and effort.

I am very satisfied with this brand of koji rice. Every grain has a good coating. The aspergillus culture used was very aggressive and had no problems making bean paste, sake or quick aging a steak. I am very happy with this purchase and will be buying this brand again.

Great for quick dry-aging meat
The short-term koji works well for quick dry-aging meat.Grind it to a powder, coat meat with it, then place on a rack in refrigerator for 2-7 days (I typically aim for 4)Then rinse off, season, and cook. Delicious.

It works
I have been making my own amazake and buying Organic Brown Rice Koji, made in Japan, from a different source, more expensive. Since this is from Vermont, I thought I'd try it, even though I had to pay shipping, it still came in at a good value. And it worked, exactly the same as the other one.

Great price, organic, lovely-
I love this rice Koji. I use it in my hommade sake and it always taste amazing. I love the fact that it is organic. I don’t really use the amount in the recipe I follow, instead I only use 6 table spoons or so per 1/2 gallon of mixture. This Koji as far as I have read has a lot of other uses- so if you need a reliable organic Koji- I would reccomend 100% and a great price too!

High quality stuff
Great for making your own Chinese style rice wine lees, which, at least for me, are a bear cub to find out there, even with multiple Asian food stores on my home town. Very consistent quality.
